brown color with
black tones can at
times display a few
reddish stalks (for
the renowned TK
variety).The pod is
soft and greasy,
extremely fragrant
and tasty.This
category of vanilla
is primarily used in
culinary and pastry
recipes by
accomplished chefs.
INDUSTRIAL
VANILLA
Qualified under
the label US Red
or EUROPE Red
depending on the
rate of humidity
held inside, whether
the pod is split or
whole, this
category of vanilla
is drier than
Gourmet vanilla and
presents more of a
reddish brown hue, a
distinct and less
subtle flavor, and a
vanillin content
that tends to be
higher than its
gourmet counterpart.
This type of vanilla
is mainly used in
industrial
applications, either
in an extraction
setting (perfumes,
aromatics) or
directly in the food
processing industry
(pastries, ice
creams, chocolates,
etc.).
While of the same
quality rating as
the "US Red" label,
some vanilla pods
are either too small,
blemished or broken
and have been
combined to form a
category called CUTS
or BULK.This type of
vanilla is rather
inexpensive and
typically intended
for the extraction
